1 piece pita bread
8 ounces goat cheese
2 tablespoons raspberry jam
1/4 cup low moisture shredded mozzarella
1 small sliced red onion
1 tablespoon olive oil
Salt & fresh-ground pepper
1. Preheat grill to 400°.
2. Spread raspberry jam on pita and top with goat cheese and mozzarella.
3. Place pita on one side of the grill and sliced onions on other side. Cook 7 minutes.
4. Increase temperature to 480° and place onions on top of pita. Close top level of grill at medium height and cook an additional 3 minutes.
5. Remove from grill and drizzle with olive oil and salt & pepper, to taste.
