GRILLED AVOCADO with CHILE LIME SHRIMP

Light and flavorful, this good-for-you dish can be served as an appetizer or a marvelous main course. 

Ingredients 

2 tablespoons good quality olive oil
2 tablespoons freshly chopped cilantro
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1 garlic clove, minced
Zest of 1 lime
12 large raw shrimp, peeled and deveined
Salt & freshly ground pepper

Grilled Avocados
2 avocados, halved and pit removed
2 tablespoons good quality olive oil
12 cherry tomatoes, halved
1/4 cup fresh cilantro leaves 

Instructions

1. In a mixing bowl, combine olive oil, cilantro, cumin, paprika, garlic and lime zest.

2. Add shrimp. Season with salt & pepper and toss to coat. Let stand for 5 minutes.

3. Brush each avocado half with olive oil and season with salt & pepper.

4. Turn your Kalorik Smokeless Grill up to high heat and turn on the fan. Place shrimp and avocado halves cut side down on the grill. Cook for 3 minutes. Remove avocado halves from grill. Turn the shrimp over and grill for 2 minutes more, or until cooked through.

5. To serve, pile 3 shrimp inside each avocado half. Toss the halved cherry tomatoes with the remaining tablespoon of olive oil and season with salt & pepper. Pile the seasoned tomatoes on top of the shrimp, and garnish with cilantro leaves.

Chef’s Tip:  For the ultimate guacamole, grill the avocado halves first. Then scoop the flesh, dice it and stir in your favorite additions (diced onion, diced tomatoes, jalapenos, etc.).
