2 medium russet potatoes
2 tablespoons extra-virgin olive oil
1 tablespoon truffle oil
2 tablespoons Parmesan cheese, grated
Salt & freshly ground pepper

Truffle Mayo
1 tablespoon truffle oil 
1/3 cup good-quality mayonnaise


1. Peel potatoes and cut lengthwise into 1/4-inch fries. Place cut potatoes in a large bowl filled with cold water and soak for 15 minutes.

2. Drain potatoes and pat dry with paper towels. Place potatoes in a dry bowl and drizzle with the olive oil. Season with salt & pepper and toss to coat well.

3. Select the FRIES preset on your MAXX and adjust temperature to 425°F and time to 8 minutes. Once complete, shake basket to toss fries. Cook 8 minutes more, or until crisp and golden.

4. Remove fries and drizzle with 1 tablespoon truffle oil. Sprinkle with Parmesan cheese. Season with salt & freshly ground pepper.

5. To make the truffle mayo, whisk mayonnaise and truffle oil in a small bowl. Dip and enjoy!
