ZUCCHINI WAFFLES
Ingredients
1 1/2 cup grated zucchini with skin (about 3 zucchinis)
1 egg
1/3 cup milk of your choice
1/2 cup gluten-free flour
1/2 cup grated Parmesan cheese
1/4 teaspoon salt
1 tablespoon coconut oil
Instructions
1. Preheat Kalorik Belgian Waffle Maker.
2. Squeeze out the extra water from the grated zucchini
3. In a large bowl combine the flour, egg, milk, grated Parmesan and salt until it forms a batter. Stir in the grated zucchini.
5. Brush coconut oil on the Kalorik Belgian Waffle Maker, then spoon in the batter and bake for 3-5 minutes or until the outside is crispy. Serve hot.
